When Jul's restaurant in Ibiza first opened, something strange kept happening.
Around 10:45pm, the tables would begin to clear, but no one would leave.
Guests stayed.
They ordered another bottle.
They pulled their chairs closer.
They moved toward the counter.
The room changed shape.
By 11pm, the dining room felt different.
Looser.
Warmer.
More alive.
It wasn't dinner anymore.
It was something else.
The 11 Bar exists because that moment deserved its own space.
Not before dinner.
Not after the party.
But the turning point.
And that's how 11 came to be.
